Around the World in 80 Sausages

Sausages – chopped or ground meat with seasonings, flavourings and fillers stuffed into a casing – date back at least 5000 years and are enjoyed, in some variety, all around the world.

The concept of sealing minced meat inside a case is simple, and lends itself to a seemingly endless array of fillings and flavours. Britain alone boasts more than 500 sausage recipes though the most famous are arguably the Cumberland (traditionally shaped into a circular coil and flavoured predominantly with pepper) and the Lincolnshire (flavoured with sage).

You’re probably familiar with some of the more popular types of sausages that have made their way onto our plates from other parts of the world. Spain’s Chorizo (pork meat flavoured with paprika), Germany’s Bratwurst (can be made from veal, pork or beef and available in more than 40 regional varieties) and Italy’s Salami (a cured sausage made from fermented and air-dried meat) are all very popular outside of their home countries – but what about the rest? Have you heard of Merguez (a spicy mutton or beef sausage native to Tunisia), Som Moo (made from raw pork and enjoyed in Laos and Vietnam) or Makanek (mini sausages from Lebanon seasoned with rich spices like cinnamon and nutmeg)?
